Sicilian noodle casserole

60 Minutes SERVES 4


12 oz FRAMORE Rigatoni
3 eggplants
12 oz fiordilatte cheese
2 oz di parmigiano cheese
14 oz Framore Tomatoes
Salt q.s.
Pepper q.s.
Extra Virgin Olive oil q.s.
Peanut oil q.s.


  • Wash the eggplants; cut their edges and then cut the eggplants into sticks.
  • Add abundant peanut oil into a pan and fry the eggplants.
  • Once bronze, drain them and put them on a plate with absorbent paper.
  • Cut the fiordilatte cheese into cubes
  • Prepare the sauce with FRAMORE Tomatoes adding salt, basil and oil and cook for 30 minutes.
  • Cook the pasta just for 5 minutes. Then pour it together with all the other ingredients into an oven dish and bake it for 30 minutes at 200º
  • Once ready, leave it rest for a while and then cut and serve it
